I use Quicksilver to do most app launching and quite a bit of Finder stuff too. It's far more powerful than most give it credit for.

Is there an easy way to group Applications into a stack?
I like having my Adobe Apps on teh dock, but things like GarageBand/iMovie/iDVD and such or Office apps are things I would like to stack into Media Apps and Office Apps.

18 with the Trash and Finder on 15 inch MacBook Pro

I like the dock bigger with less things on it. But when I get a 24 inch iMac it'll probably be a lot more.
 
How many of those do you use on a regular basis? I can't imagine how many apps you have open at once.

Not many. I don't have more than two or three open at the same time; I was surprised myself that I had so many.

EDIT: I've just had a purge and got it down to a more manageable 33, with a possibility of a few more going.
 
34 on my new MacBook, including Finder, System Preferences, Downloads, Applications, and Documents Stacks, as well as Trash.

I have probably 45 on my iMac.
 
16 plus the trash. I like to keep in minimal - spotlight finds everything I launch occasionally.
