AFAIK. they hold it 14 days or likely 21 days. You could just visit the apple store where you are picking up and ask them too.

I just bought an iPhone 13 mini and the check-in letter said the store would hold the phone for 7 days. I don’t know if the policy is different for the new phones
They must have changed the policy then. I do actually remember most recent magsafe wallet order that it told me that i needed to pick it up in 7 days. I think they shortened it.
I was around an Apple store today and decided to go and ask. They stated they'll hold an item for 7 days, but to not wait until the 7th day "just in case." Many thanks to those who responded!
So it is confirmed that they changed it to 7 instead of 14. I guess because some don't end up picking it up in a timely fashion and their shelf is getting full. lol
