Hi all,
I’ve googled, but I can’t find the answer to this. I am considering a move to a fully loaded 2019 iMac. Ideally I’d like to connect up a 2nd 27” display @ 1440p and a couple of 23” 1080p displays I have available.

Is this possible?
 
Absolutely. You can
[1, $] go the USB C route and buy a few dongles to connect the displays over DisplayPort or HDMI
[2, $$] go the Thunderbolt 3 dock route, and add a few display ports
[3, $$$] go the eGPU route, I have a Sonnet Box connected to one of my Thunderbolt 3 ports and the graphics card has 6 ports for displays.
 
According to Apple's spec list it supports 4k 60hz output to two other displays simultaneously so I don't see why it wouldn't be able to handle a 1440p and 2 1080p displays.

I think this is a port question, there's no DisplayPort or HDMI on the iMac, you need to go through the USB C / Thunderbolt ports. :-/
