At the very least OS X DVD Player supports 5.1 output through the built in optical out in Macs for DVD playback and has since at least !0.4 which is when I started using 5.1 speakers with my Macs.I do on consoles where I can be sure that they support Dolby Digital/DTS. I have no clue how it would work in OS X.

(This is for osx)
1. You buy an external usb sound card that supports 5.1 and osx.
2. Get a 5.1 sound system (duh)
3. Attach and go to system pref/sound, set output for the usb device.
4. Go to applications/utilities/audio midi setup, go to your device, where it says 2ch-24 bit integer, set it for 6 ch (or so). Go to configure speakers, test them, make sure they work.
Games and movies must support 5.1... A lot of steam games do though.
It's probably best to get 5.1 for bootcamp though.
