Hello,
Just ordered my first iMac with 8GB RAM which I will be replace soon. Since iMac does not support quad channel, which would be wise to buy now? 2x32GB RAM or 4x32GB RAM? Is anyone using 4X RAM with higher performance? Or should I buy 2X 32GB only?

Note: I can't buy 2x64GB stick because it's not available in my country now.
 
This depends on your usage profile really. If you will not use more than 64Gb of RAM (which most people would not) they the additional RAM will just be unecessary cost and may result in very slightly slower performance as the memory timings may need to be reduced to support the extra sticks (honestly though you won’t notice the difference).

So in a scenerio that I might need 64GB of RAM, I should go with 2X32GB sticks instead of 4 sticks.

Yes. Although the performance difference will be so negligible you honestly won‘t notice. But you will retain the flexibility to add more RAM later
