So I have used 12.7 GB with 1.1GB available... I haven't updated any apps since last Thursday. I now have 32 apps awaiting update to send me my (worthless) retina graphics data on my iPad 2. I'm worried I will run out of space. What are your experiences?

well, I'm not sure why you told me to relax, because over the weekend I tried to update all my apps and I was told that there wasn't enough room on my iPad. That was my concern. So it requires some amount above 1GB....

The amount required would vary from app to app. There is no rule of thumb. However, the more graphics' intense it is the more likely it will be bigger, maybe even significantly so. Apps that are mainly text wouldn't eat too much extra storage since vector text would adjust to new resolution, unless developer uses funky fonts.
