Agree with Applejuiced and company. No RAM is too much ram.
The main reason the iPhone has to freeze it's apps in the multitasking bar, and doesn't run them simutaneously, is due to lack of RAM. We really need at least 1GB of ram. As long as it doesn't boost the price of the iPhone i'm okay with it.

Dumb question. No one complains about having too much RAM. Everyone complains when there isn't enough RAM and what you can do with the device becomes limited because of a lack of RAM.
The problem with your theory on multi-tasking is that Apple 'freezes' the applications because if left open the CPU would have to be working a lot harder to run them all. Not really a problem with the A5 BUT battery life is what we should be concerned about.
But it's not running them all, that's the point of freezing them. They aren't running, they're suspended. Battery life is not a concern here.

But how much RAM is too much RAM?
I'd love the day when I open a program, switch from it; the next day I open it and it's right where i left it. Hell, I'd love to open that same program later in the day and it is right where I left it.

Nope, it would not come with weird numbers its either 512 MB RAM or 1 GB RAM.
Same with storage capacity, you won't see 24GB or 96GB.

On a computer, too little RAM will slow you down, because the computer will swap on the hard disk.
iOS doesn't do that. If you have too little RAM, the programs are killed. Eventually even the one in the foreground will "crash".
Your slowdowns are caused by too little CPU power, buggy programs or bugs in iOS. But not because of too little RAM.
There are two job positions.
One pays 50,000
Another pays 100,000 ( 2x more)
Which job would you choose? A person with common sense would choose choice 2. Same with RAM why would you want a 512 MB RAM when you can get 1 GB RAM??
