I was browsing the tech specs on the new AW10 and noticed the cellular versions weigh less than non-cellular. Why could that be?

I never considered if the actual logic boards or antennas are different between these versions, or if the cellular modem is just software/firmware locked, but here is an actual physical difference between them. Except, I would expect the cellular versions to weigh more, if indeed the logic boards had an extra chip, or there was an extra antenna somewhere.

Can anyone enlighten me on why the weight difference?

You’re talking about one gram.

It could be the different digital crown button on the cellular version. Of course that’s just a guess. Besides Apple, there’s no one that would know this without a tear down and it’s not out yet.
 
I also noticed this. I don't think the crowns even differ between the cellular and wifi models now.
Maybe a spacer, which weighs more than the cellular chip and antenna, is removed on those models but is present on the wifi ones.
