Asking this question cause I frequently see people buying more than one or 2 cases when buying an new iphone, do you change cases frequently? the act of changing cases all the time don't cause any damage to the iphone? specially the stainless steel sides?
 
I change cases when I change phones. I got new case with my iPhone 14 because my previous case, for my previous phone, the XS Max, didn't fit it. Otherwise, I would have kept that case. So...at this rate...I've changed cases once in four years.

It baffles me that you seem to think leather or plastic cases would somehow damage stainless steel.

The damage comes from abrasion from grit, sand, or dust build up between the case and the phone.
In some environments this can be like a grinding compound.
Keep the phone & cases clean.....shouldn't be a problem.
I take my case off once a week and give the case & phone a thorough cleaning.
 
I change cases frequently.
And as @Splitrail said it is very good to clean your case from time to time.

I change cases since my iPhone 5 and never had any scratches coming from it. You will have a greater change of a scratch if you never clean your phone and case.

Traditionally I just have one case per phone. However, for my 14 Pro Max I will swap between two since I need a rugged case for work, gym, hiking etc., but still want a classy and nice looking thin case for certain other times.
 
Usually one case but sometimes swap it out to get a new feeling. It helps a lot to not get carried away to have a everyday case then whenever there's a sale, get a case that is usually more on the pricy side of things.
 
I usually get 3 or 4 cases to start off. Then use a case at a time for few days to get the feel of it and see how I like it. After that I use my favorite ones.

If I’m at work I’ll usually use a more tougher case like a Caudabe synthesis. If I go out or dress up I’ll use a classier case like a leather one. It just depends what I’m doing or going.
