I'll go "oooof", too! Not sure if I would touch a watch case with metal polish designed to keep your car wheels looking nice. Find a product that is designed for fine jewelry.
I think that someone might say that their car wheels are, in fact, fine jewelry.
I would be inclined to disagree. :D
Someone else may chime in with a good choice.
Or, talk to an actual jeweler (if you can still find one :) )

I'm finding the watch to be really beneficial being a little far sighted, the fonts are wonderfully readable and much better than my iPhone.

But I digress, I can't see the scratches if they are there and I'm pretty sure they aren't yet but I'll get it polished when I feel the need and have heard that polishing on a buffing wheel isn't going to super heat the watch and fritz the electronics :D
 
The case is stainless steel, and would be solid.

There are no "layers of thin (very thin) metal" that you risk removing by polishing stainless steel.
You are thinking of plating, such as chrome, etc. Stainless steel is an alloy, not a surface plating process.
A touch up (as in wiping fingerprints from the case with a soft cloth) can be done whenever needed. More involved polishing (such as a jeweler would do), wouldn't need to be done very often - at most, once or twice a year - maybe...
My own opinion - leave 'battle scars' as is. Gives your watch character!

I have a 17 year old Rolex and a 10 year old Panerai that have yet to be polished. So, never?!?! :p
