I'm the opposite - I treat my computer like the "library" which my iPad pays a visit to every now and then to borrow new stuff. I had a 32 gig iPad2 but never filled it higher than 16gb.

This is one of those questions that each individual must answer for him or herself. ;)

Thats what I do. 16 GB isn't an issue for me.

if the apps were in retina resolution, and i added a couple of videos i would be well over.

Edit: maybe it would be a good idea to invest the money you save in buying a 16gb model on icloud (or equivalent) for extra storage?
This. 16GB is perfect if you store your media on your home server/cloud and just keep your apps on the iPad (save for wastes like navigation).
 
I ordered the 32GB model simply for the fact that three 1080p HD movies at 5GB each already eats up 15GB!

16GB will be utilized for normal use like apps and music while the other 16GB is strictly for HD movies. Having 3 movies on rotation seems like a good number.
 
FWIW, I resaved the iBooks Author book I wrote this morning using IBA 1.1 which optimizes pictures for the new iPad. The file size went up from 75 MB to 115 MB.

This is a book with about 225 pictures from a 6 MP camera.
 
I could fill even the 64gb with just music if I wanted to. With that being said I have stuck with the 32gb for the first 2 iPads but will be going 64GB this time around. 16GB should be plenty for basic every function. Just try not to get too media crazy, and you'll be alright.

I have a different opinion. I have at 16 gb original iPad 3G, a 32 gb iPad 2 wifi, and I ordered a 16 gb new iPad with 4g. I plan to stream my media this time rather than keep on my iPad all the time. I'm getting a 5 gb data plan with the hotspot option to power my other two. My kids will be using the older iPads and I will use the new one.

Same here I use the iPad for temporary storage and stream or load what I need.
The way I see it if I really need more I'll buy again or buy one of those new wifi hard drives for like $50.00
Which would be even more useful as my whole family can use that too.
