It used to be possible to change the siri search engine from google to duckduckgo in Siri's preferences.

having just read the article about defaulting to google thought I'd check the settings - but in iOS 14 don't find any settings?

what's going on?

Siri has never been “adjustable”. You’re thinking of Safari’s search engine, which is under Settings > Safari.

You could be right about that. I doubt that any search provider can profile you if you ask Siri to do the search.

Here's an article from FT

(paste link into google to get past paywall...)

Apple develops alternative to Google search

It says "In a little-noticed change to the latest version of the iPhone operating system, iOS 14, Apple has begun to show its own search results and link directly to websites when users type queries from its home screen."

After iOS 14.2 I've noticed that my Siri image searches are in Bing, web pages come up in Google.
I can't find a way to change any of this!

The only work around is to say your specific engine as in "search duckduckgo for images of" .

oh the humanity.
