How should I set up my iP7?

Hey everyone! My iP7+ will be here Tuesday and I'm wondering how I should set it up. I currently have a Verizon iPhone 5s (completely paid off) so should I put the SIM card in the new Verizon 7, or just set it up with the sim it has in it? Thanks!!
