Would like to know the best way to add a TV series & seasons to itunes from a DVD. I am familiar how to add movies to itunes but how to add tv series so the episodes are separate and I can choose what episode I would like to watch. I was able to get season 1 on itunes but I do not have the option to select what episode I would like to watch, just runs continuously one after the other. I could fast forward/rewind to different episodes but that isn't a good option.

You may want to take a look at Plex. It's excellent for managing and delivering movies and TV shows. It automatically downloads artwork, metadata, subtitles, etc. and delivers them to any computer or mobile device on your network. You can also use your cell phone as a remote control device. Plex also handles more file types than iTunes.

did you rip the dvd as episodes or did you rip the title on the dvd that is exactly what you said the continuous play one?
 
Assuming you've ripped each episode to a different .M4V (or whatever format) file, after you import them into iTunes, do a "Get Info" on each file - in Options, set Media Kind to "TV Show" - in Video, set "Show" to the show title and "Season Number" and "Episode Number" as appropriate. You can also name each episode with "Episode ID". iTunes will sort it all out from there.
 
You can rip the DVD to you computer using HandBrake and then add it to your iTunes library. I imagine HandBrake will be able to rip individual episodes easily.
 
I would try iflicks and use the iTunes compatible preset

It will add all the episode info plus movie it to iTunes for you
