   I have to embed pictures into a document for school, and I want to caption these pictures. I tried a textbox, but I'm having trouble moving it to right under the picture.

   I would use the textbox. I have never had trouble aligning things just by moving around but if you do, you can use the Inspector and the "metrics" tab to precisely place things on the page.
