When you first boot you Mac it ask you your mail.

And I just realized I made a mistake, and I can't find a way to correct this.

Go into Address Book and edit your own address book entry.

As for the mailings (new products and the like if you checked that you wanted to receive them) click on the link at the bottom of the e-mail if you did give a valid address and it will take you to a page to edit your information online.
