How to change my iCloud account on OS X?

I recently changed the email address of my iCloud account, as the email I was using for it was just being inundated with junk mail.

I have changed the email address no problem on my iPad and iPhone, but I don't seem to be able to on my Mac. When attempting to sign out of iCloud in Settings, it threatens me with deletion of all my iCloud documents. How do I get around this?

You can't "get around" it. If you sign out of iCloud (on any device) it has to remove the iCloud data from your device. The data needs the account to exist. Signing back in should bring that data back.
