I'm a fairly new Mac user and much more familiar with PC. My Macbook Air 2017 came with Sierra or High Sierra loaded on it and I recently upgraded to Mojave. Mojave must be pre-set to update every time the computer is restarted and it's driving me crazy. I don't have a great connection to the internet and it takes foever.

How do I set it to update at night while it's sleeping? Or set it to ask before doing updates and not so them every time it's restarted?

Go to System Preferences and click the Software Update icon. There you can click the Advanced button and make some tweaks (although you can't schedule the timing), or you can turn off auto checks/updates completely. That covers your OS updates. For apps, it's the same basic setup except you adjust the settings in the App Store app preferences.
