How to completely erase iPhone

Hi - I recently purchased the iPhone 3G, and I'm currently trying to sell my 2G phone on eBay. I erased all the information on the phone, yet it still shows my phone number when I tap the contacts on my phone. Everything else is erased. How do I completely erase the phone so there is zero information on it, and someone else that purchases my phone will be able to set up their phone as a new account.

Thanks - I've tried that but when I tab the phone icon, under my contacts it is all blank except for the 'My number' field at the top which still displays my phone number.

Have you removed your old sim card?

Correct me if I am wrong, but isn't the number being read from your SIM card?
