My wife has a Gmail account on her phone and after upgrading to iOS10 we went looking for a way to delete an email that she's currently viewing. There used to be the trash can symbol at the bottom of the screen. Now apparently the default behavior of the replacement symbol is to archive (move to All Mail), not delete an email (move to Trash). And the only sure way to discard an email into Gmail's Trash seems to be to tap "Move" and then tap "Trash" on the next screen. Two taps as opposed to just one, bravo Apple!

But I fumbled around in the settings and found a way to change "Move discarded messages into:" Deleted Mail.

Assuming Deleted Mail = Trash, as it has the same symbol, I was able to delete an email this way with a single tap on the new trash symbol, just like I used to on her previous iOS 8. But an email deleted this way doesn't end up in Gmail's Trash! I cannot find it anywhere.

Any idea what's going on?
 
Settings - Mail - Accounts - Gmail - Account - Advanced - "Move Discarded Messages Into" - Deleted mailbox.
 
You might need to check the IMAP settings in her actual gmail account (not from her phone but from actual gmail in a browser, under "Forwarding and POP/IMAP"); specifically the options for:
"When I mark a message in IMAP as deleted:"
"When a message is marked as deleted and expunged from the last visible IMAP folder:"

OK I checked and it's set to defaults there:

When I mark a message in IMAP as deleted:
Auto-Expunge on - Immediately update the server. (default)

When a message is marked as deleted and expunged from the last visible IMAP folder:
Archive the message (default)

But as I said the deleted messages do NOT end up in the All Mail (Archive) folder of the account.

Settings --> Mail -> Accounts -> Gmail account --> Advanced --> Mailbox Behavior --> Deleted Mailbox

is "Trash" selected for both "on my iphone" and "On the server"?

Actually I can only select either of them, but not both. It's set to Trash on the server.
