I have an iPhone 5. I am returning it to the Apple Store tomorrow for a replacement as the power button broke.

I went into Settings > General > Reset > Erase All Content and Settings.

Have I done a full factory reset? Has this removed absolutely everything from my phone so that when it is activated it is brand new with no trace of anything of mine?

Yep, that wil do it, remove all your info and data and return it to a new state
