How to edit the Exif?

Any software recommend for editing the Exif of a photo?

One option is to use a program like ExifRenamer 2.1.1
However you can also open images in a text editor, (try dragging and dropping your image file onto the TextEdit icon in the dock for example), and directly edit the various fields.

What would be the purpose of editing EXIF data?

if your cameras date and/or time were incorrectly set you might want to change them, also you can ad in your own data, for geo-tagging etc
