i know you can drag the thumb drive icon into the trash and then take out the thumb drive from the usb port

...but can you "select" the icon on the desktop and hit "command e", and then take out the thumb drive from the usb port?

This should work. You should give it a few seconds to unmount the drive before you whip it out. I'm using Semulov, a free utility for your menubar that allows you to eject volumes. Also it supports Growl, so you can get a notification popup that the volume has successfully unmounted.
 
Right click or Ctrl click should also give the option to eject.

You can also eject directly from a Finder window.
