So my hard drive crashed and I got a new one but when I stick a curtain disk in it says it cannot be installed on this laptop so how do I know which disk my Mac hard drive needs?

Are you talking about the install disc? If so, where did you get the new one? If you're talking about the hard drive, it must be formatted to HFS+ (Mac OS Extended). Any hard drive that fits will work, as you can reformat any drive to suit your needs.

I think the question was about which OS DVD to use (but it's unclear).

If your system came with OS 10.5 then you need either the grey restore DVD that came with the system, or a retail (white) 10.6 DVD.

How do I step by step makerhe hard drive work on my computer as there is already a os on it. I can get to disk utility and all
