If you want to hear what the Mac Pro sounds like with the fans spun up you can try Prime95 with these torture test settings and wait a couple minutes:

Almost 300 W CPU power, and additionally 224 W for memory. I only have 6 dimms, might go even higher with 12.

To get Prime95 to work on Catalina:

chmod +x Prime95.app/Contents/MacOS/Prime95

Or boot up holding the D key to run Apple’s hardware diagnostics. The fans will go to max, I’m assuming as part of the test.

You could also use custom settings on Mac's Fan Control free version from CrystalIdea Software. This is a handy utility/app that I have used for years to cope with heavy CPU use.

Also if you just turn the chassis handle (do not lift) the fans all preemptively spin up.
