When I'm in my Sent items, the columns are "From, Subject and Date" - From is a bit useless as they're all from me, would be much easier to show To but I can't see how to do this - any one able to show me?
 
Apple Mail is useless since the dropped columns in Catalina. It's a real pain.

In addition to your problem there is also the same issue with "smart folders" which when including "sent items" show your name.

It's like if nobody at Apple uses Mail.

I wouldn't call it useless. It's designed/simplified to be useful for the non-techy general public—which is the vast majority of their customer base—and it is wildly successful at that.

Where Apple falls short is people who are "geeks" like me (and it sounds like you as well) who want to dive into the nitpicky stuff and want the ability to do things, no matter how obscure, and also know how and are comfortable doing it.

Apple is not that type of company, and they never have been. And with today's privacy/security-focused customers, they're only going to simplify and lock things down even more.

Smart folders are useless if you do not have "From" and "To" columns side-by-side when mixing received and sent emails. This has nothing to do with geek or no-geek.
You didn't say "smart folders" are useless... you said "Apple Mail" is useless. To call the entire app useless because it lacks one tiny feature you want is a bit dramatic.
 
Smart folders are not a "tiny feature" – they are the heart of a mail application. I have currently over 60k of emails in 11 accounts and I could not do without smart folders. Because of the dis-improvement of Apple Mail by removing working features, I had to switch to a different app.

MailMate. I really like it, but there are two disadvantages:
- not everybody is into writing emails in MarkDown (not an issue with me as I am used to it)
- you cannot deactivate/hide accounts, you need to deinstall them and then later reinstall and re-download, so that they disappear in the sidebar (which is problem for me with 11 accounts of which 7 are irregularly used)

I wasn't talking about Smart Folders... I was talking about the lack of the "TO" in column view.
 
“Sort by” is not the same as “Show”

this is completely infuriating and i kept thinking i just needed to look around more and the latest update and would find how to turn the feature back on. It’s ridiculous.
there is even some tandom setting that sounds like it would work, but just makes the little grey block with the word “To:” appear with the subject line, but not actually given you any info.

I use a fairly massive number of aliases to control my mail volume and sort and delete chunks at a time. Without being able to see the to: field, the system totally breaks down.

Since I cant see a single up side for this change, It’s crazy making.
 
I know this is an old thread, but I've been annoyed by the lack of a 'to' column in OS X mail since Catalina and only found it today, googling to see if Monterey had restored it. Along the way I found this thread, so I guess others might too. If it helps one person it's worth posting. Right click on the label bar at the top of one of the mail columns, and it offers you all the column options Mail used to have, including 'to'. I feel silly that it took me this long to discover this, but I really don't think it says much for Apple UI design that they have a menu option of show message size, but need a right click in the right place to show 'to'.
