How to have different account name send on outgoing mail using different SMTP server?

This used to work but somehow it
doesn't any longer.

I have all my Verizon Fios email
forwarded to my MobileMe account
via GMAIL.

However, using Verizon's SMTP
outgoing server, I still can't stop
me@mac.com from showing up as
the sender address instead of the
name on my Verizon address.

Anyone have a suggestion how to
make this work?

I'd be willing to use GMAIL as the
outgoing server if you think that would
be the answer, but right now I am
having problems with the iPhone using
GMAIL as the SMTP.
