I have a headless 2011 Mac Mini that currently runs 10.7. I have just updated (actually a fresh install from a USB stick using the 10.8 InstallESD.dmg) my MacBook Air to 10.8.

Does anybody know if it's possible to do a fresh install on my headless Mac Mini via Remote Desktop from my MacBook Air?

If you mean a clean install (erase, then install), then no, as it's not possible to use Remote Desktop without setting that up on the remote computer first. You don't need to unless you're experiencing problems, and you definitely could just run the installer normally and Remote Desktop would be access it again once the install finished.
