How to make my 1st gen iPhone into an iPod Touch?

I would like to use my 1st gen iPhone as an iPod Touch that syncs to a different Mac. How can this be done without iTunes wanting to activate the iPhone?

I haven't done it yet myself (my new phone is still waiting for activation), but you just leave the phone as is (with the original, previously activated SIM installed). iTunes will activate the phone, but obviously without cell service. Everything else will function normally.
