Another quick question.

So for the longest time, my notes were only on my phone. My email accounts of icloud was not used to sync my notes. The account was always designated as "on my iphone." I figured it was a good time to finally back it up to the cloud to seamlessly move device to device without having to always do a full restore. Problem is, I have no idea how to easily move over the notes that are located on my phone to the cloud or an email account.

The only thing I can think of is copy and pasting each note from phone to account of my choosing but honestly thats extremely tedious. Is there anything that can be done to make this a more seamless process?

If you have a Gmail account, you can link your notes to Gmail and they will show up anywhere that you have Gmail available (other devices.) I have all of my notes showing on 5 different Apple devices and they're available on my laptop, too.

Settings > Notes > Default Account (Setup link to Gmail).

In Notes app, set Accounts to your Gmail address.

Is this what you want to do? Gmail makes it easy.
