Is there any way to not include the iMessage? I know I can delete them but I want a truly clean slate of 0 messages when I reformat my phone.

Nope. Unfortunately, it's all or nothing. However, when you reformat you're iPhone, you can always not restore from a back-up; you will still have all your contacts, calendar events & photos (assuming you use iCloud & iCloud Photo Library to sync contacts/calendars/photos).
