I've seen a video on youtube awhile back about opening all the dock apps at once. But now I'm having trouble finding it.

Does anyone know how to open them all at once?
 
You can open all apps at once from the Applications folder by hitting Command+A then Command+O.

But opening just the apps you have in the Dock...? Maybe a script could be written to do that. I don't ever use them, so just a hunch.

Make a folder, and put an alias for each Dock app inside that folder. Then CTRL-A the contents of that folder and hit CTRL-O, or CMD-down arrow.
