Sometimes I just want to play an mp3 file without adding the song to my iTunes library but right now, it automatically does that. Does anybody have a remedy to that?

Also, second question, there are times when I want to play a single mp3 file in a folder but it ends up playing all the songs from that folder or album. Is there a way to stop that?

Select the song in Finder, right-click on it, select OPEN WITH, then QuickTime Player (7 or X), unless iTunes gives you some controls you like to take advantage of.
 
single click the song and click your space bar, it'll open up the preview/temp built in player and you can play it like that, no importing or right clicking to open it in something else. When youre done just hit the space bar again!
