Does anyone know how I can set up iTunes so it doesn't automatically add any new audio/media track I play to my library? It's a nightmare trying to catalog my music collection when I have to trawl through hundreds of unlabelled audio tracks that have nothing to do with music.

Unfortunately I have the same problem and no solution.

In addition is there a way to not have iTunes automatically play music/audiobooks that I add to the library?
 
I would change the default player of most media files to an application other than iTunes.

Unless the item is in my library, I'd rather not have to deal with iTunes to play it.

Quicktime is the default for most items on my macs. It's a simple player that gets the job done without having to worry about items getting put into the iTunes library.
