By accident I have overwritten very complex note (list of my codes and license number of some softwares) and just the latest one remained there. Is it possible that there is no way to recover the history and previous version that was here 5 minutes ago ?? (such and essential thing). I have time machine backup, when through some online advice - like Time Machine - user - library - container ... but it seems to nowhere ...

Yes, they are on icloud - but already in the "updated" version :((
 
If not in recently deleted you will need to restore from a TM or other backup from when the note existed. Then do this:

If iCloud already has the incorrect version you must recover notes with iCloud turned off or out it will just overwrite the restored note. Then after restore, move it to "on-my-mac" before turning iCloud notes on again.
