How to restore my 4S without upgrading to iOS 8?

Hey guys I want to restore my 4S to its factory settings, it's running the latest iOS 7, but iTunes says Restore and Upgrade.

I want to keep this phone as a back up to my new 6 Plus

Is there anyway I can clean my 4S without installing iOS 8?

Go to Settings > General > Reset > Erase All Content and Settings.
