iPhone How to restore without upgrade

I am currently running 6.1 on my iphone 5.
I am having issues with my phone and fear that I may have to restore it.
How do I do this WITHOUT being forced to upgrade to 6.1.3?

You cant restore an iphone 5 to anything but the latest ios and that's 6.1.3

You can try ILEX RAT and try reinstalling Cydia, according to the latest change log it is possible. Not sure if works 100%, will try later on my iPod 4.
