I have to get rid of my PowerMac 8500 (System 7.5.2, PowerPC 604e). I plan to move all my stuffs from PM 8500 to my MBP. What is the best way to run the applications made for the old system on the MBP? Can I create a virtual machine (virtual PowerMac 8500) under Leopard?

You can, but you need to install some non-Apple software. Basilisk II is probably the better bet for 7.5, although it doesn't do PowerPC emulation. Your other option is SheepShaver
