Hello,
I would like to find a way to copy exactly "Macintosh HD", erase the disk and paste the exact same "macntosh hd". Avoiding time machine.
Do you know how to ?
Thanks

Do a command-r boot to recovery then use Disk Utility to "restore" Macintosh HD to an external drive will get you an exact clone of Macintosh HD, including the recovery partition on that volume. No need for any third party utilities at all.

Then you can boot to the clone and clone back with Disk Util again if you want.

One more vote for CarbonCopyCloner.

It will clone over your recovery partition, as well.
