I have a Sprint iPhone 5S that I want to sell. To do this, I just have to erase all content and settings, then take my SIM card out, and the phone will be deactivated, right? The person who buys it just puts their SIM card in, and they are good to go, right?

I've never done this before.

I just recently did this with a 5c you need to call Sprint and they will walk you through the process. It's online. Be sure to let who ever is buying the phone know that they must have a SIM card of their own, just a word of advice from someone dealing with an eBay buyer who didn't realize this.
 
With Sprint you don't take out the SIM card. The SIM card is tied to the phone rather than your account.

IIRC you must deactivate Find My iPhone if it's enabled on the phone in iOS7 before you erase it. Otherwise, the buyer won't be able to setup the phone without your current login credentials.

This. Turn off Find My iPhone.
