I currently have an jailbroken iPhone 3G with AT&T. However, I do not have a data plan so I turn off 3G and CELLULAR DATA to prevent charges. However turning off cellular data prevents me from sending MMS messages. Is there a way or setting to allow me to send MMS messages while still being undetected to AT&T that I have an iPhone without a data plan?

No matter what you do, AT&T will auto add a data plan to your account when they do a routine audit of their network or your account. They'll see that you have an iPhone (via the iPhone's IMEI) without a data plane and auto add on.

Other than the inevitable, there is no way to send/receive MMS without having an active data connection. Its like this for all phones capable of MMS.
