Should be fairly simple:

1) Find a .doc file
2) Right click it or control-click it.
3) Press and hold option -- this will change "open with" in the menu to "Always open with."
4) Select NeoOffice from the list, if it is there, or use the "other" option to navigate to it and select it.

That will only work for that specific file. If you want to open all .doc documents with NeoOfice, then:

1) Find a .doc file
2) Right click it or control-click it.
3) Select "Get Info"
4) Under "Open with:" select NeoOffice and then click on "Change All..."
