I saw this video (linked below) on youtube that demonstrated how to setup an email account on an iPhone for instant pushes of email content. I did this on my iPhone and it works great - I have an man.com email. I want to do the same for my Macbook.

The video states to use the Microsoft exchange method to achieve the fast pushes. My question is, what server do I need to enter for the Microsoft Exchange for an man.com account?

taking a blind shot try either mail.man.com or email.man.com. Those are typically generic server addresses.
 
Gmail + Exchange works smooth & very fast.
...and isn't relevant to setting up a desktop email client. You can only set up gmail via ActiveSync ("as Exchange") on a mobile device.

my email address is an @msn though...
As far as I can tell you're stuck configuring it as POP (which is pull, not push). If mail isn't coming in fast enough for you then see if you can adjust the polling intervals.
