I have the AW3 lte and am wanting to always show a map of the route I take when exercising outdoors. When I go to the activity app on my phone after doing a workout, I am able to find my workout and look at stats but am not able to see the route every time. How do I ensure that the route option is always there for me to look at after an outdoor workout?

Scroll up. It may be hidden at the bottom. If it's not there. I have no clue. I just went and looked and every workout I've ever done has a map of my route.

Thanks even when I scroll down I don’t seem to have any routes showing. Maybe it’s an iOS 11 issue?

It sounds like you are using the standard workout app, but if not then check that the app you are using has been updated for watchOS 4 and saves workout routes, and also that you have given that app permission to save routes in Settings / Privacy / Health.
