How to skip specific folders when backing up?

I want to know if there's a way to backup my system, with exception to specific folders, namely my iTunes library. I'm trying to save space on the external, and I already carry a backup of my music library in my pocket .

I know this can be done with Time Machine, but I'd rather use a dedicated external HDD for that, and I don't have the funds for one right now. Basically, I'm looking for an app like Carbon Copy Cloner or SuperDuper that can exclude specific folders from backup. If there was a way to do it with either of the aforementioned apps, it wasn't obvious. I looked around. Thanks in advance.

I'm pretty sure CCC can do this (I don't have it installed right now to check).
