How to stop CMD + Option + Eject making Mac sleep

I have a Mac that is a VM, muscle memory is making my family make it go to sleep when they walk away by pressing CMD + Option + Eject but with a VM it won't wake up again. Is there a way to override or disable any of the built in-built shortcuts?
