This kind of process keeps draining lot of mobile data all the time. I switched off everything I could - icloud, photos, low data mode on etc etc. Yet it keeps going on. I don't want any "sync" while on mobile data - how to switch this annoying process? Why is Apple pushing things one never wished ??
 
What is it exactly you’re referring too? I’m not sure I understand from the wording you used … I can’t see ‘documents and sync’ anywhere ..
 
I am not sure what we are talking about either. If it is icloud-drive, then going all the way to the bottom in Settings->Mobile data, you can disable it.

If it is more general, that you don't want apps to sync on mobile data:
settings->general->background app refresh->background app refresh->WiFi (or Off if you like).

One hour outside today. 1,6 gb away documents & sync
Did you check before, since you know it is from 1 hour. The top entry says current period and it is so big on mine that whatever a period is, it must long timespan. Anyway I still think it is iCloud drive. You can also disable it completely in iCloud settings. Min is 69MB,
 
I had this problem a few years back where my iCloud Keychain got corrupt and so the phone was continuously trying to sync. My data usage went through the roof and the battery life on the phone was terrible.
 
This is really terrible ... I switched off everything I could, yet the mobile data keeps running. How could Apple create such a terrible thing and process? Why there is not a simple switch stop all background activities when using mobile data? I don't know what to do ... My data limit gets exhausted in few moments by doing nothing

Do you have iCloud Keychain enabled? Try disabling that if you do.
 
This is the price to pay for living inside a walled garden with a dictatorship-like company fiercely hiding every bit of dirty secret behind the scenes.

At this point, I’d reset the device, set it up as new and see if data still moves around. Then, I will log into my iCloud account, see how it goes. At least before getting angry at Apple Support line, you know exactly which part you angry the most.
