I want to start syncing my iphone to my new Mac but if I want to sync applications and music, all the current apps/music will be deleted.

Whats the best way to solve this?

I also have this problem. I do not want to lose all my songs especially ones that I do not have back up of.
 
For that I believe there's a number of apps that will pull them off without using iTunes. And then you could just add them to your library and sync it.

my problem is that I don't want to delete apps and their settings but I do want to sync new music.

Connect iPhone to new computer.
Wait for it to show up in iTunes.
Right-click the iPhone icon in iTunes.
Select "transfer purchases."
Wait while your apps are copyed to the new computer.
You should now be able to sync your music to the iPhone without losing your app data.

Will that work for songs that you did not buy through itunes? What if they were CDs that were ripped to your computer then put on your phone?

No. The OP already figured out that you need to copy your music by using third-party programs. So I was addressing the other half of the original question.
 
Will I need to re-jailbreak it and install the jailbreak apps? Will notes and all that be lost?
 
Same type of problem with Itunes and new computer

My computer completely died so I had to reformat it and start with a clean windows OS.

My iphone was synced with that itunes and was 'fine'.

I install itunes again and point it to my music directory and it sucks in all my songs/videos. These songs/videos are already on my iphone.

But when I plug in my phone, I want to sync from my iphone TO Itunes and it wont do it. It wants to sync a blank app dir, music (ok), video (ok) and a blank picture folder OVER my good iphone data.

It's telling me that if I sync, I'll lose my apps and pictures? There must be a setting in preferences to fix this?
Also, I tried the "Transfer applications" function and it only moved over about 20 out of my 50 apps, so it's completely missing tons of apps.

What's the solution please?

Try an app called disk aid for manually getting your pictures. Don't bother if you already have them on another hard drive or anywhere else, but if thats the only place you have them give it a try.

Also it may not copy over pirated applications, only ones registered or w/e to your itunes account.

As for the missing apps you could use iTunes to re-download them again. If they are purchased apps when u click the buy button a window will pop up saying you already purchased the app and ask you if you would like to download the app again for free.
