System Preferences > Energy Saver > Sleep.

Just set the computer to sleep "never" but the display to sleep after a certain amount of time.

Just set the screen to sleep and the system to never sleep. Unfortunately, the newer screens cannot just have the brightness turned to off, like the older ones.

Use a hot corner to 'sleep display' and move the mouse there every day before you leave the computer

This keyboard shortcut needs to be known to more people. It's the best way to sleep the display.

Also, Option + Command + Eject sleeps the entire computer.
