I just got the new Series 7 (very happy so far) but I forgot to make sure I had a backup of my settings from my Series 6. So set up as new. But apparently they took out (or moved where I can't find it) the setting to turn off the Now Playing screen from opening on the Watch when I start playing music on the connected Apple iPhone. It used to be Settings/General/Wake Screen but apparently all the Wake Screen settings are gone. Now they have "Return to Clock" but apparently controls how long an app will remain open but not prevent the app from opening in the first place.
Anyone have any ideas PLEASE???

Go to settings on watch app, then display & brightness. It is at the bottom.

I am tired of clearing this from the watch face. I have done the display and brightness setting and it still shows up. I am using an iwatch6 with the latest watchOS. How in the world can I turn it off?! I use the homepod to play the radio while I work and I do not need the watch face to show the controls when I have the iphone right there and can reach the homepod to stop it also. If I could stop it from showing up on the iphone12 as well I would love that!

I had it (I am the OP) and now after changing the setting mentioned above don't see the Now Playing as an app screen. All I get is the little notification symbol - the one that looks like the Now Playing icon as a dot towards the top of the watch face - which stays on forever unless I close the Music app on my iPhone.

Try Settings - General - Airplay and Handoff - Transfer to HomePod off
 
This article is out of date and no longer accurate, as are the myriad of other "solutions" found when googling this issue, because they have recently changed where this setting is buried. I know this because I went nuts trying to find where they were now hiding this setting recently as well. There's no more "Wake Screen" setting.

On the Watch itself, Settings/Display & Brightness/Auto-Launch Audio Apps - toggle it off. This (at least on my AW Series 7) prevents the Now Playing app from from starting on the Watch face.
